Afaltoxin is a significant threat to human health and effective protocols to reduce exposure are implemented for those who live in high-income countries, However, those living in communities in developing countries where locally produced goundnut (peanut) and maize are consumed could be at heightened health risk to aflatoxin. Not only is the environment in tropical regions favorable for the production of groundnut and maize, but it is also favorable for Aspergillus flavus and A. parasiticus, fungi that produce aflatoxin. The presentor will outline issues that make aflatoxin an increased risk for those living in rural communities in developing countries, The presentation will address the need for increased education and also explore why "common sense" solutions are not always appropriate. Fianlly, current recommendations for mitigating aflatoxin in these communities will be adressed.
